APPLICATION

In many countries of Europe, in the USA, and China Ace-k can be used in the production of foodstuffs, medicine and cosmetics, In food, it can be used in processing of table toppings, gum, instant coffee , instant tea , puddings, ice cream, confections, preserved fruits and vegetables, milk products, baked goods and beverages.
1.When Ace-k is used alone, approximately 800-1000mg/l or even less in beverages, satisfactory results are obtained. Since Ace-k contains no calories and doesn't take park in metabolism, it is especially fit for patients suffering from phenyllectouria and those who need low calorie foodstuff, such as diabetics.
2.As a sweetener, Ace-k adapts to all kinds of soft beverages, which include fruit juice, carbonate and lactic acid drinks due to its many chemical characteristics, e.g. stability in solution within the range of PH 2-10even at a temperature of 225Deg.C and in a solution. When used in combination with diabetin, glucose, high diabetin juice or cane sugar, Ace-k can improve taste and provide a synergistic sweetening effect, thus reduce the production cost. At the same time it can strengthen the beverage's consistency and degree of viscosity. It can also simplify the process by lessening the process of adding material and avoid cane sugar carbonization under high temperature.
3.When Ace-k is used in producing puddings and jams, some filling materials, such as sorbitol should be added together to prevent tooth decay. COMPARISON WITH OTHER SWEETENERS
1.Cane sugar is a sweet material used widely in the production of foodstuff. It can be accepted easily by many consumers because of its natural characteristics, however other considerations such as obesity, diabetes, phenyllectouria, must be evaluated over taste. Moreover, in the case of industrial sugar, the production cost is high, which led sweetener users to seek new substitutes.
2.Sorbitol, xylitol,and sweetleaf synanthrin can all be substitutes for sugar for the patients suffering from phenyllectouria. Again, in each case the manufacturing cost is high based on their lower degree of sweetness, preventing their wide use in the industry.
3.Saccharin, the first generation chemical synthetic sweetener, is 200 times as sweet as the cane sugar. Using saccharin as can reducing the manufacturing cost of the industrial sugar greatly, but the bitterness that accompanies saccharin as a side effect and past cancer concerns limited its use.

4.Cyclamate was a second generation chemical synthetic sweetener. It is 40 times as sweet as cane sugar and safer than saccharin, but is metabolized in the human body resulting in toxic side reactions, which has forbidden its use in the USA.
5.Aspartame is the third generation chemical synthetic sweetener, which is 200 times sweeter than cane sugar. Aspartame has been used in USA since 1981 and has the leading position in the market. Since then , many short comings of Aspartame have been found causing concerns to many consumers. First, heat stability is poor, which degrades and causes loss of sweetness at the temperature of 80DEG.C.Secondly, once degraded, one of the products, methanol, is harmful to human health. Thirdly, it cannot resist acid or alkali, so it becomes unstable within the range of pH3-5 and sweetness is lost in the neutral or alkaline solution. Moreover, the intermediates for producing Aspartame are not readily available, therefore expensive, resulting in high prices for its limited use and applications.
